Hello everyone. Today I want to share with you a simple veggie balls recipe. Combine in medium size balls some roasted eggplant chopped with some breadcrumbs, a little bit of garlic, some parsley, a pinch of nutmeg and salt and pepper to taste. Fry until cooked or as I usally do bake them in the oven for about 20 minutes at 180° C. Serve with tomato sauce and a cup of quinoa and bulgur.
