Ingredients: 400 grams chicken breast skinned and cut into bite size pieces – 3 tablespoons of extra virgin olive oil – 1/3 medium leek thinly chopped- 3 zucchini sliced – 2 tablespoons of soy sauce – 1 teaspoon of toasted sesame seeds- 1 teaspoon of sunflower seeds – 1 teaspoon of linseeds – 1 tablespoon of pumpkin seeds – salt and black pepper to taste – 1 cup per person of hot basmati rice to serve a side.
Directions: In a large pan, stir frychicken in extra virgin olive oil until lightly browned and tender. Then add soy sauce and chopped leek, after few second, add zucchini and cook for about 5 minutes. Before serving, sprinkle with all the seeds and salt and black pepper to taste. Serve with hot basmati rice.
