Nutricious And Delicious #2: Lentils Salad

Hello everyone. Today I propose you a lentils salad.. Lentils are one of nature’s superfoods, rich in protein, B vitamins and fibre.. Perfect for lunch or dinner… Healthy and nutricious… I hope you like it… I wish you all a wonderful day

Ingredients: 280 gr lentils – 300 gr cherry tomatoes – 1 cucumber – 1/2 medium onion – 1 yellow bell pepper – some leaves of basil – 4 tablespoon extra virgin olive oil – salt and pepper -1 bay leaf.

Preparation: Rinse the lentils under running water, put them in a pot with water, bay leaf and cook until crispy, about 18-20 minutes. While the lentils are cooking, cut cherry tomatoes in half, diced cucumber, cut the half onion and bell pepper. In a large bowl mix all the vegetables, lentils, basil leaves, add extra vergin olive oil, salt and pepper. That’s it!
