Ingredients: 280 gr lentils – 300 gr cherry tomatoes – 1 cucumber – 1/2 medium onion – 1 yellow bell pepper – some leaves of basil – 4 tablespoon extra virgin olive oil – salt and pepper -1 bay leaf.
Preparation: Rinse the lentils under running water, put them in a pot with water, bay leaf and cook until crispy, about 18-20 minutes. While the lentils are cooking, cut cherry tomatoes in half, diced cucumber, cut the half onion and bell pepper. In a large bowl mix all the vegetables, lentils, basil leaves, add extra vergin olive oil, salt and pepper. That’s it!
