Quinoa Salad Tuscany Version

Hello everyone. One of my favorite tuscan summery dish is “Panzanella”… but since I changed my lifestyle, I like to eat healthier, so I prefer to replace country-style white bread with quinoa and add more vegetables. Ciao a tutti. Uno dei miei piatti toscani preferiti in estate Γ¨ la panzanella… Ma da quando ho cambiato stile di vita, mi piace sostituire il pane toscano con la quinoa e aggiungere altre verdure. Ingredients: 2 cups of water – 1 cup of quinoa, rinsed – 2 cups of tomatoes, diced – 50 gr of lettuce – 1 cucumber, diced – 1/4 cup of green onions, chopped- 1/4 cup of drained capers – 1/4 cup of sliced fresh basil leaves – 3 tablespoons of extra virgin olive oil – 1 tablespoon of apple vinegar – salt and pepper to taste.

Directions: Cook the quinoa in boiling water, reduce the heat and simmer until the quinoa is tender and liquid has been absorbed. Cook the quinoa according to the indications of time given on the package and let cool. Mix the quinoa with tomatoes,Β  lettuce, cucumber,green onions, capers, basil. Mix the apple vinegar, extra virgin olive oil, salt and pepper and toss with salad. Bon appetit.

Ingredienti: 2 tazze d’acqua – 1 tazza di quinoa lavata – 2 tazze di pomodori a pezzi – 50 gr di lattuga a pezzi – 1 cetriolo a fette – 1/4 di tazza di cipollotti a pezzi – 1/4 di tazza di capperi lavati – 1/4 di tazza di basilico spezzettato – 3 cucchiai di olio extra vergine di oliva – 1 cucchiaio di aceto di mele – sale e pepe QB.

Procedimento: Cuoci la quinoa in acqua a bollore seguendo le indicazioni della confezione e falla raffredare. Mescola la quinoa con i pomodori, la lattuga, il cetriolo, i capperi, cipollotti, basilico. Mescola l’aceto di mele, l’olio extra vergine d’oliva, sale e pepe all’insalata. buon appetito.
